There's no better combination than stracchino and sausage; even more so if they’re accompanied by a plate of gnocchi. Throw in a few toasted walnuts and you have yourself an unforgettable (yet easy!) first course. See how it's done in this week's video recipe from the chefs at Al.ta Cucina.
Ingredients for five portions:
– 500g of potato gnocchi
– 300g of fresh Italian sausage
– 250g of stracchino cheese (also called crescenza)
– 30g of parmigiano cheese
– 60ml of white wine
– Finely diced onion to taste
– Salt and pepper to taste
– Extra virgin olive oil to taste
Method:
-In a large frying pan, brown the finely diced onion in a few drops of olive oil. Add in the sausage and cooked until browned.
-Add the white wine and let evaporate.
-Add in the stracchino cheese with a small amount of cooked pasta water, a pinch of salt, a dusting of pepper, and mix it all together until melted and blended.
-Add the drained gnocchi (cooked to al dente) to the pan together with a handful of chopped walnuts and the parmigiano.
– Stir through and serve
